Cream of Chicken Soup
A rich and velvety British style chicken soup simmered with leeks, fresh thyme, and cream. Perfect for a cozy and satisfying meal on a cold day.
Ingredients
- 3 tbsp butter
- 1 cup leek, thinly sliced
- 1 cup celery, diced
- 2 garlic cloves, minced
- 1 tsp fresh thyme, chopped
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1 lb boneless chicken breast, diced
- 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper

Melt 3 tbsp butter in a pot over medium heat, then add 1 cup thinly sliced leek and 1 cup diced celery. Cook for 5 minutes until softened.

Add 2 minced garlic cloves and 1 tsp chopped fresh thyme, cooking for 1 minute until fragrant.

Stir in 1/4 cup all-purpose flour and cook for 2 minutes to eliminate raw flour taste.

Slowly whisk in 4 cups chicken broth until smooth, then bring to a simmer.

Add 1 lb diced boneless chicken breast, reduce heat, and simmer for 12 to 15 minutes until chicken reaches an internal temperature of 165°F (74°C).

Stir in 1/2 cup heavy cream, 1 tsp salt, and 1/2 tsp black pepper, heating gently for 2 minutes before serving.
