Ingredients

  • 2 tbsp desiccated coconut, grated
  • 1 tsp cumin seeds
  • 1/2 tsp black mustard seeds
  • 1/4 tsp fenugreek seeds
  • 10 curry leaves
  • 1 cup yellow onion, sliced
  • 1 tbsp ginger garlic paste
  • 1/2 tsp ground turmeric
  • 1 tsp red chili powder
  • 1 tbsp tamarind paste
  • 3 tbsp vegetable oil
  • 1 tsp salt

Instructions

    Heat a dry skillet over medium heat and toast 2 tbsp raw peanuts, 2 tbsp white sesame seeds, 2 tbsp grated desiccated coconut, and half of 1 tsp cumin seeds until golden, then blend with half a cup of water into a smooth paste.

    Heat 3 tbsp vegetable oil in a deep pan over medium heat and fry 8 slit lengthwise mild green chilies until blistered and tender, then remove and set aside.

    In the same pan, add remaining 1 tsp cumin seeds, 1/2 tsp black mustard seeds, 1/4 tsp fenugreek seeds, and 10 curry leaves until they sputter.

    Add 1 cup sliced yellow onion and cook until browned, then stir in 1 tbsp ginger garlic paste and cook for 1 minute.

    Add 1/2 tsp ground turmeric, 1 tsp red chili powder, 1 tsp salt, and the blended nut paste, cooking for 5 minutes until oil separates.

    Stir in 1 cup of water and 1 tbsp tamarind paste, then return the fried 8 slit lengthwise mild green chilies to the pan, cover, and simmer for 10 minutes.
