Mysore Pak
A classic South Indian melt in your mouth sweet made from chickpea flour, sugar, and rich clarified butter.
Ingredients
- 1 cup chickpea flour, sifted
- 1 cup granulated sugar
- 1/2 cup water
- 1 cup ghee, melted

Grease a square pan with a small amount of oil or ghee and set aside.

Keep 1 cup melted ghee warm in a small saucepan over low heat.

In a heavy deep pan, combine 1 cup granulated sugar and 1/2 cup water, boiling until syrup reaches a single thread consistency.

Lower the heat and gradually whisk in 1 cup sifted chickpea flour to form a smooth paste without lumps.

Add the warm 1 cup melted ghee one ladleful at a time, stirring continuously until each batch is fully absorbed and the mixture becomes frothy.

Pour the hot mixture into the prepared pan, let it cool for 10 minutes, and slice into squares.
