American Chop Suey
A New England comfort classic: elbow pasta in a savory beef tomato sauce with peppers and onions, pure comfort food.
Ingredients
- 12 oz elbow pasta
- 1 lb ground beef (80/20)
- 1 medium yellow onion, diced
- 1 medium green bell pepper, diced
- 1 can crushed tomatoes (14.5 oz can)
- 1 can tomato sauce (8 oz can)
- 1 cup beef broth
- 2 garlic cloves, minced
- 1/2 tsp dried oregano
- 3/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil

Cook 12 oz elbow pasta according to package directions until al dente. Drain and set aside.

Meanwhile, heat 2 tbsp olive oil in a large skillet over medium-high heat.

Add 1 lb ground beef (80/20) and cook, breaking it up as it browns, about 5-7 minutes. Drain excess fat if needed.

Stir in 2 minced garlic cloves, 1 medium diced yellow onion, and 1 medium diced green bell pepper. Cook for 3-4 minutes until vegetables soften.

Add 1 can crushed tomatoes (14.5 oz can), 1 can tomato sauce (8 oz can), 1 cup beef broth, 1/2 tsp dried oregano, 3/4 tsp salt, and 1/4 tsp black pepper.

Bring to a simmer and cook for 8-10 minutes, stirring occasionally.

Fold in the cooked pasta and stir well to combine all ingredients.
