Chicken Cutlet Sandwich
Crispy breaded chicken cutlets layered on toasted ciabatta with melted provolone, roasted red peppers, and fresh arugula. A spread of mayonnaise completes this satisfying classic.
Ingredients
- 2 lbs boneless skinless chicken cutlets, pounded thin
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian seasoned breadcrumbs
- 1/4 cup olive oil
- 4 ciabatta rolls, halved
- 4 provolone cheese slices
- 1 cup jarred roasted red peppers, sliced
- 2 cups fresh baby arugula
- 1/4 cup mayonnaise

Set up three shallow bowls with 1/2 cup all-purpose flour, 2 beaten large eggs, and 1 cup Italian seasoned breadcrumbs.

Dredge each piece of 2 lbs pounded thin boneless skinless chicken cutlets in flour, dip into egg, and press into breadcrumbs to coat evenly.

Heat 1/4 cup olive oil in a large skillet over medium-high heat until shimmering.

Fry chicken cutlets for 3 to 4 minutes per side until golden brown and internal temperature reaches 165 degrees F.
