Fish Roll
A savory West African pastry stuffed with spiced flaked mackerel and baked until golden brown. Perfect as a satisfying hand-held snack or savory appetizer.
Ingredients
- 1 can canned mackerel, flaked
- 1/2 cup yellow onion, finely diced
- 1 tsp habanero pepper, minced
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 cup cold unsalted butter, cubed
- 1 egg egg, beaten
- 1 tbsp vegetable oil
- 1/2 tsp salt

Heat 1 tbsp vegetable oil in a skillet over medium heat.

Add 1/2 cup finely diced yellow onion and 1 tsp minced habanero pepper, sauteing for 3 minutes until soft.

Stir in 1 can flaked canned mackerel and 1/2 tsp salt, cooking until heated through to an internal temperature of 145°F.

In a bowl, whisk 2 cups all-purpose flour and 1 tsp baking powder.

Rub 1/4 cup cubed cold unsalted butter into the flour mixture until flaky, then bind with cold water to form a firm dough.

Roll out the dough, cut into rectangles, place fish filling along one edge, and roll up tightly.
