Cavolfiore Affogato
A classic Sicilian smothered cauliflower dish braised slowly in red wine with olives, savory anchovies, and melted pecorino cheese.
Ingredients
- 1/4 cup extra-virgin olive oil
- 1 red onion, thinly sliced
- 4 anchovy fillets, chopped
- 1 head cauliflower, cut into florets
- 1/2 cup kalamata olives, halved
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup dry red wine
- 1/2 cup Pecorino Romano cheese, grated

Heat 1/4 cup extra-virgin olive oil in a large Dutch oven over medium heat.

Add 1 thinly sliced red onion and 4 chopped anchovy fillets, cooking for 5 minutes until onion softens and anchovies melt.

Layer 1 head cut into florets cauliflower, 1/2 cup halved kalamata olives, 1/2 tsp kosher salt, and 1/2 tsp black pepper into the pot.

Pour in 1 cup dry red wine, cover tightly, and simmer on low heat for 25 minutes until cauliflower is tender.

Sprinkle with 1/2 cup grated Pecorino Romano cheese and cook uncovered for 3 minutes until cheese melts.
