  • 3 lbs pork leg (about 3 lbs), deboned
  • 8 cups water
  • 2 tsp salt
  • 6 garlic cloves, smashed
  • 2 bay leaves
  • 1/2 tsp black peppercorns
  • 4 quarts vegetable oil for frying
  • 1/2 cup white vinegar
  • 4 tbsp soy sauce
  • 4 garlic cloves for sauce, minced

Instructions

    Place 3 lbs deboned pork leg (about 3 lbs) in a large pot with 8 cups water, 2 tsp salt, 6 smashed garlic cloves, 2 bay leaves, and 1/2 tsp black peppercorns.

    Bring to a boil, then reduce heat and simmer for 60 minutes until pork leg is very tender. Drain and let cool completely.

    Pat pork leg dry with paper towels. Cut into serving portions.

    Heat 4 quarts vegetable oil for frying in a deep pan or wok to 350-375°F. Carefully fry pork leg in batches for 15-20 minutes per batch until golden brown and crispy on all sides. Remove to a wire rack.
