Garlic Butter Creamed Corn Chicken
Seared chicken breasts finished in a skillet of sweet creamed corn, garlic butter, and Parmesan, the one-pan summer 2026 dinner everyone kept saving.
Ingredients
- 4 chicken breasts, pounded even
- 1 tsp salt and pepper
- 4 tbsp butter, divided
- 4 cloves garlic, minced
- 2 cups corn kernels
- 1 cup heavy cream
- 1/2 cup grated Parmesan
- 1 tsp smoked paprika
- 1/2 cup chicken broth
- 1 tsp fresh thyme, chopped

Season 4 pounded even chicken breasts on both sides with 1 tsp salt and pepper and 1 tsp smoked paprika.

Melt half of 4 tbsp butter in a large skillet over medium-high heat. Sear the chicken for 5 to 6 minutes per side, until golden and cooked through to an internal temperature of 165F. Remove and set aside.

Lower the heat to medium and melt the remaining butter in the same skillet. Add 4 cloves minced garlic and cook for 1 minute until fragrant.

Stir in 2 cups corn kernels and 1/2 cup chicken broth, and simmer for 3 minutes.

Pour in 1 cup heavy cream and 1/2 cup grated Parmesan, stirring until the sauce thickens slightly, about 3 to 4 minutes.

Return the chicken to the skillet, spoon the creamed corn over the top, and simmer for 2 minutes to warm through. Finish with 1 tsp chopped fresh thyme.
