Pan con Pollo
A traditional warm Salvadoran chicken sandwich featuring tender chicken simmered in a spiced tomato sauce, layered with crisp watercress, cucumber, and radishes on toasted bread.
Ingredients
- 2 lbs bone-in chicken thighs
- 4 Roma tomatoes, chopped
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 1 green bell pepper, chopped
- 2 cups chicken broth
- 4 hoagie rolls, split
- 1 cup fresh watercress
- 1 cucumber, sliced
- 4 radishes, sliced

In a large pot, combine 4 chopped Roma tomatoes, 1 chopped yellow onion, 4 minced garlic cloves, and 1 chopped green bell pepper with 2 cups chicken broth and simmer over medium heat for 10 minutes.

Puree the cooked vegetable mixture in a blender until completely smooth, then pour the sauce back into the pot.

Add 2 lbs bone-in chicken thighs to the simmering sauce, cover, and cook for 30 minutes until the internal temperature reaches 165°F.

Remove chicken from the pot, shred the meat from the bones, and stir the shredded chicken back into the warm sauce.

Fill each of the 4 split hoagie rolls with shredded chicken and sauce, then garnish with 1 cup fresh watercress, 1 sliced cucumber, and 4 sliced radishes.
