Ingredients
- 1 lb fresh okra pods, trimmed
- 4 garlic cloves, peeled
- 1 tsp dill seeds
- 1 tsp yellow mustard seeds
- 1/2 tsp crushed red pepper flakes
- 1 cup water
- 1 cup distilled white vinegar
- 1 tbsp canning salt

Pack 1 lb trimmed fresh okra pods, 4 peeled garlic cloves, 1 tsp dill seeds, 1 tsp yellow mustard seeds, and 1/2 tsp crushed red pepper flakes tightly into clean glass jars.

Combine 1 cup water, 1 cup distilled white vinegar, and 1 tbsp canning salt in a saucepan over medium-high heat.

Bring the mixture to a rolling boil and stir until the salt dissolves completely.

Ladle the hot brine over the okra, leaving a half inch of headspace at the top.

Seal the jars tightly and refrigerate for at least 24 hours before serving.
