Pork Cracklins
Crispy Cajun pork belly cubes rendered slowly and fried hot for a crunchy skin and tender center.
Ingredients
- 3 lbs pork belly with skin, cubed
- 4 cups peanut oil
- 2 tbsp Cajun seasoning
- 2 tsp kosher salt

Fill a heavy pot with 4 cups peanut oil and heat over low heat to 230 degrees F.

Add 3 lbs cubed pork belly with skin and simmer slowly for 45 minutes to render fat until internal temperature reaches 165 degrees F.

Remove pork belly with a slotted spoon and rest on a wire rack for 15 minutes.

Increase heat under the pot until oil reaches 375 degrees F.

Flash-fry pork belly for 3 to 5 minutes until skin blisters and crisps.

Transfer cracklins to a bowl, toss with 2 tbsp Cajun seasoning and 2 tsp kosher salt, and serve warm.
