Pasta con Stracciatella
Silky pappardelle with creamy stracciatella cheese, fresh lemon, and delicate herbs, a simple Roman dish that's elegant and light.
Ingredients
- 1 lb dried pappardelle pasta
- 8 oz fresh stracciatella cheese
- 1 lemon, zest and juice
- 12 fresh mint leaves, torn
- 12 fresh basil leaves, torn
- 1/4 cup extra-virgin olive oil
- 1/2 cup grated Parmesan cheese
- 1 tsp salt
- 1/4 tsp black pepper

Bring a large pot of salted water to boil and cook 1 lb dried pappardelle pasta according to package directions until al dente.

Reserve 1 cup of dried pappardelle pasta cooking water before draining.

In a large serving bowl, gently tear or break 8 oz fresh stracciatella cheese into small pieces. Add 1/4 cup extra-virgin olive oil and toss lightly.

Add the hot cooked dried pappardelle pasta to the bowl with fresh stracciatella cheese and toss gently. Add 1/2 cup of the reserved pasta water and toss to create a light, creamy coating.

Add lemon juice and lemon zest to the pasta and toss again.

Season with 1 tsp salt and 1/4 tsp black pepper. Stir in 12 torn fresh mint leaves and 12 torn fresh basil leaves.

Divide into serving bowls and top with 1/2 cup grated Parmesan cheese. Serve immediately.
