Attieke with Fried Fish
Steamed fermented cassava grains paired with crispy fried tilapia and a bright, spicy onion and tomato salad.
Ingredients
- 3 cups dried attieke
- 1.5 cups warm water
- 4 tilapia fillets, patted dry
- 1 bouillon cube, crumbled
- 1/3 cup vegetable oil
- 1 red onion, thinly sliced
- 2 plum tomatoes, diced
- 1 habanero pepper, minced
- 2 tbsp lime juice
- 1/2 tsp salt

Sprinkle 1.5 cups warm water over 3 cups dried attieke in a steamer basket, fluffing with a fork to break up clumps.

Steam dried attieke over boiling water for 10 minutes until tender and soft, then toss with half of the 1/2 tsp salt.

Season 4 patted dry tilapia fillets evenly with 1 crumbled bouillon cube and remaining salt.

Heat 1/3 cup vegetable oil in a skillet over medium-high heat and fry tilapia fillets for 4-5 minutes per side until crisp and internal temperature reaches 145°F.

Toss 1 thinly sliced red onion, 2 diced plum tomatoes, 1 minced habanero pepper, and 2 tbsp lime juice together in a bowl.

Serve hot dried attieke alongside fried tilapia fillets topped with the tomato mixture.
