Cơm Chiên
Vietnamese fried rice with day-old rice, egg, vegetables, and your choice of protein for a quick lunch or dinner.
Ingredients
- 3 cups cooked rice, chilled, separated into grains
- 2 eggs, beaten
- 1/2 onion, diced
- 1/2 cup frozen peas and carrots
- 2 green onions, chopped
- 4 cloves garlic, minced
- 1 tsp fish sauce
- 1 tsp soy sauce
- 1/2 tsp sesame oil
- 1/8 tsp white pepper
- 2 tbsp vegetable oil
- 4 oz protein (shrimp, chicken, or pork), diced, cooked
- 1/4 cup fresh cilantro, chopped

Heat 2 tbsp vegetable oil in a large wok or skillet over high heat.

Add 4 cloves minced garlic and cook for 30 seconds until fragrant.

Add 1/2 diced onion and cook for 1-2 minutes until softened.

Push everything to the side and scramble the 2 beaten eggs in the empty space, breaking them into small pieces. Mix with the vegetables.

Add the separated into grains cooked rice, chilled and break up any clumps, stirring constantly (about 2-3 minutes).

Add the 4 oz cooked protein (shrimp, chicken, or pork), diced, 1/2 cup frozen peas and carrots, 1 tsp fish sauce, 1 tsp soy sauce, 1/2 tsp sesame oil, and 1/8 tsp white pepper. Toss everything together.

Cook for 1-2 minutes more, stirring frequently.

Stir in the 2 chopped green onions and 1/4 cup chopped fresh cilantro.

Taste and adjust seasonings if needed. Serve hot.
