Pork and Beef Aspic
A traditional cold dish of slow-simmered savory meats set in a naturally gelled, garlic-infused broth.
Ingredients
- 2 lbs pork shank, rinsed
- 1 lb beef chuck roast, cut in half
- 12 cups water
- 1 yellow onion, peeled
- 1 carrot, peeled
- 6 garlic cloves, minced
- 3 bay leaves
- 1 tsp black peppercorns
- 1.5 tsp fine salt

Place 2 lbs rinsed pork shank and 1 lb cut in half beef chuck roast in a large pot with 12 cups water and bring to a boil.

Skim any foam from the surface, reduce heat to low, cover, and simmer for 3 hours. Ensure meat reaches an internal temperature of at least 160°F.

Add 1 peeled yellow onion, 1 peeled carrot, 3 bay leaves, 1 tsp black peppercorns, and 1.5 tsp fine salt, then simmer covered for 1 hour more.

Strain the broth into a bowl, discard vegetables, shred the meat finely, and stir in 6 minced garlic cloves.

Divide the meat into shallow dishes, pour the strained broth over top, and chill in the refrigerator for 6 hours until set.
