Sate Padang
Indonesian beef skewers cooked in aromatic spices, grilled to smoky perfection, and served with a thick, spicy turmeric gravy.
Ingredients
- 1.5 lbs beef chuck, cubed
- 6 shallots, chopped
- 4 garlic cloves, minced
- 4 red chilies, seeded
- 1 tbsp fresh ginger, grated
- 1 tbsp fresh galangal, grated
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 0.5 tsp ground cumin
- 1 lemongrass stalk, bruised
- 3 cups beef broth
- 3 tbsp rice flour
- 4 tbsp water
- 2 tbsp vegetable oil
- 1 tsp salt

In a blender, combine 6 chopped shallots, 4 minced garlic cloves, 4 seeded red chilies, 1 tbsp grated fresh ginger, 1 tbsp grated fresh galangal, 1 tsp ground turmeric, 1 tsp ground coriander, and 0.5 tsp ground cumin into a smooth paste.

Heat 2 tbsp vegetable oil in a pot over medium heat, then add the spice paste and 1 bruised lemongrass stalk, stirring until fragrant for about 5 minutes.

Add 1.5 lbs cubed beef chuck, 3 cups beef broth, and 1 tsp salt to the pot, then simmer for 30 minutes until beef is tender.

Remove beef pieces and thread them onto wooden skewers, leaving the spice broth simmering in the pot.

Grill skewers over high heat for 2 to 3 minutes per side until charred and internal temperature reaches 160 F.

Whisk 3 tbsp rice flour with 4 tbsp water to form a slurry, stir into simmering spice broth until thick, and pour over skewers to serve.
