Sayur Sop
A light Indonesian vegetable soup featuring tender chicken, potatoes, and carrots simmered in an aromatic garlic broth.
Ingredients
- 2 tbsp vegetable oil
- 4 shallots, sliced
- 4 garlic cloves, minced
- 6 cups chicken broth
- 1/2 lb boneless chicken breast, cubed
- 2 carrots, sliced
- 2 Yukon Gold potatoes, cubed
- 2 cups green cabbage, chopped
- 1/4 tsp ground nutmeg
- 1/2 tsp ground white pepper
- 1 tsp salt
- 4 scallions, thinly sliced

Heat 2 tbsp vegetable oil in a soup pot over medium heat.

Add 4 sliced shallots and 4 minced garlic cloves, sautéing for 3 minutes until golden and fragrant.

Pour in 6 cups chicken broth and bring to a simmer over medium-high heat.

Add 1/2 lb cubed boneless chicken breast, 2 sliced carrots, and 2 cubed Yukon Gold potatoes to the pot.

Simmer for 10-12 minutes until chicken reaches an internal temperature of 165°F and potatoes are tender.

Stir in 2 cups chopped green cabbage, 1/4 tsp ground nutmeg, 1/2 tsp ground white pepper, and 1 tsp salt, cooking for 3 minutes until cabbage is softened.

Remove from heat and garnish with 4 thinly sliced scallions before serving.
