Sop Ayam
A classic Indonesian clear chicken soup made with tender chicken, potatoes, carrots, and aromatic spices.
Ingredients
- 2 lbs bone-in chicken thighs, cut in half
- 1 tbsp vegetable oil
- 4 shallots, minced
- 4 garlic cloves, minced
- 1 inch fresh ginger, sliced
- 6 cups water
- 2 carrots, sliced
- 2 Yukon Gold potatoes, cubed
- 1/4 tsp ground nutmeg
- 1/2 tsp ground white pepper
- 1 tsp salt
- 2 celery stalks, chopped
- 2 scallions, chopped

Heat 1 tbsp vegetable oil in a large pot over medium heat.

Add 4 minced shallots, 4 minced garlic cloves, and 1 inch sliced fresh ginger and cook for 3 minutes until fragrant.

Add 2 lbs cut in half bone-in chicken thighs and cook for 5 minutes until lightly browned.

Pour in 6 cups water and bring to a boil, skimming off any foam from the surface.

Stir in 1/4 tsp ground nutmeg, 1/2 tsp ground white pepper, and 1 tsp salt, then reduce heat to low, cover, and simmer for 25 minutes until chicken reaches an internal temperature of 165°F.

Add 2 sliced carrots and 2 cubed Yukon Gold potatoes, simmering covered for 12 minutes until vegetables are tender.

Stir in 2 chopped celery stalks and 2 chopped scallions, then remove from heat and serve.
