Bratwurstsuppe
A comforting German soup featuring sliced bratwurst, tender potatoes, and cabbage cooked in a caraway broth.
Ingredients
- 1 lb fresh bratwurst sausages, sliced
- 2 tbsp unsalted butter
- 1 cup yellow onion, diced
- 2 cups carrots, sliced
- 2 lbs Yukon Gold potatoes, cubed
- 4 cups green cabbage, shredded
- 4 cups beef broth
- 1/2 tsp caraway seeds
- 1/2 tsp black pepper

Melt 2 tbsp unsalted butter in a large Dutch oven over medium heat.

Add 1 lb sliced fresh bratwurst sausages and cook until browned and cooked through to 160°F, about 8 minutes, then remove and set aside.

Add 1 cup diced yellow onion and 2 cups sliced carrots to the pot and cook for 5 minutes until soft.

Stir in 2 lbs cubed Yukon Gold potatoes, 4 cups shredded green cabbage, 1/2 tsp caraway seeds, and 1/2 tsp black pepper.

Pour in 4 cups beef broth, bring to a simmer, cover, and cook for 15 minutes until vegetables are tender.

Return cooked bratwurst to the pot and cook for 2 minutes to heat through.
