Cheese Spätzle
Homemade egg noodles layered with melted Gruyère cheese and sweet caramelized onions. A cozy mountain comfort dish baked to rich perfection.
Ingredients
- 3 cups all-purpose flour
- 4 large eggs, beaten
- 2/3 cup water
- 1 tsp fine salt
- 1/4 tsp ground nutmeg
- 4 tbsp unsalted butter
- 2 large yellow onions, thinly sliced
- 2 cups Gruyère cheese, shredded

Melt 4 tbsp unsalted butter in a skillet over medium heat, add 2 large thinly sliced yellow onions, and cook for 15 minutes until caramelized.

In a bowl, whisk together 3 cups all-purpose flour, 4 beaten large eggs, 2/3 cup water, 1 tsp fine salt, and 1/4 tsp ground nutmeg to form a smooth batter.

Bring a large pot of salted water to a boil over high heat.

Press batter through a spätzle maker into boiling water and cook for 2 minutes until spätzle float, then drain.

Layer hot cooked spätzle with 2 cups shredded Gruyère cheese and caramelized yellow onions in a dish, then bake at 400F until cheese melts.
