Frixuelos
Traditional thin Spanish crepes lightly flavored with lemon zest and anise liqueur. Cooked until delicate and golden, then sprinkled with sugar and rolled.
Ingredients
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup whole milk
- 1/4 cup granulated sugar
- 1 tsp lemon zest, finely grated
- 1 tbsp anise liqueur
- 2 tbsp unsalted butter, melted

Whisk 2 beaten large eggs, 1 cup whole milk, half of the 1/4 cup granulated sugar, 1 tsp finely grated lemon zest, and 1 tbsp anise liqueur together in a bowl.

Whisk in 1 cup all-purpose flour until smooth and let the batter rest for 30 minutes.

Melt a portion of 2 tbsp melted unsalted butter in a skillet over medium heat, pour in a thin layer of batter, and cook for 1 minute per side.

Sprinkle each cooked crepe with remaining granulated sugar and roll tightly.
