Huevos Revueltos con Loroco
Scrambled eggs with loroco, a unique Salvadoran flower with a delicate asparagus-like flavor. A protein-packed breakfast with authentic Central American flair.
Ingredients
- 8 eggs, beaten
- 1/2 cup loroco flowers (fresh or frozen)
- 2 tbsp butter
- 1/2 onion, thinly sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 corn tortillas, warmed

Heat 2 tbsp butter in a large skillet over medium heat.

Sauté 1/2 thinly sliced onion for 2 minutes until softened.

Add 1/2 cup loroco flowers (fresh or frozen) and cook for 1 minute, stirring gently.

Pour in 8 beaten eggs and stir slowly and gently for 4 to 5 minutes until soft curds form. Do not overcook.

Season with 1/2 tsp salt and 1/4 tsp black pepper to taste.

Serve immediately with 8 warmed corn tortillas on the side.
