Loroco Quesadillas
Crispy tortillas filled with melted cheese and loroco, a fragrant Salvadoran flower with a delicate asparagus-like flavor. An elegant appetizer showcasing local ingredients.
Ingredients
- 8 corn tortillas
- 1/2 cup loroco flowers (fresh or frozen)
- 2 cups mozzarella cheese, shredded
- 4 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 fresh lime

Place 2 cups shredded mozzarella cheese and 1/2 cup loroco flowers (fresh or frozen) on one half of each 8 corn tortillas.

Fold each tortilla in half to enclose the filling.

Heat 4 tbsp butter in a large skillet over medium heat.

Working in batches, toast the folded tortillas for 2 to 3 minutes per side until golden and crispy. The cheese should begin to melt.

Transfer to a serving plate. Season with 1/2 tsp salt and 1/4 tsp black pepper.

Serve hot with fresh 1 fresh lime wedges on the side for garnish and flavoring.
