Kimchi Fried Rice
A quick skillet dish combining tart fermented kimchi, savory pork belly, and crisp white rice tossed in gochujang.
Ingredients
- 4 oz pork belly, sliced
- 1 cup napa cabbage kimchi, chopped
- 3 tbsp kimchi brine
- 2 cups cooked white rice
- 1 tbsp gochujang paste
- 1 tbsp toasted sesame oil
- 2 stalks green onions, sliced
- 2 eggs

In a skillet over medium-high heat, cook 4 oz sliced pork belly for 4-5 minutes until browned and cooked through to an internal temperature of 145°F.

Add 1 cup chopped napa cabbage kimchi and 1 tbsp gochujang paste, stir-frying for 2-3 minutes until softened.

Reduce heat to medium, add 2 cups cooked white rice and 3 tbsp kimchi brine, and stir thoroughly to combine.

Drizzle with 1 tbsp toasted sesame oil and mix in 2 stalks sliced green onions before removing from heat.

In a separate pan, fry 2 eggs to your desired level and place on top before serving.
