Koko and Koose
A West African breakfast pairing warm spiced millet porridge with golden, crispy black-eyed pea fritters.
Ingredients
- 1 cup millet flour
- 4 cups water
- 2 tbsp ginger root, grated
- 1 tsp habanero pepper, minced
- 1 cup dry black-eyed peas, soaked
- 0.5 cup yellow onion, chopped
- 1 tsp salt
- 2 cups vegetable oil

Blend 1 cup soaked dry black-eyed peas with 0.5 cup chopped yellow onion, 1 tsp minced habanero pepper, 1 tsp salt, and a little 4 cups water into a thick batter.

Whip the batter vigorously with a spoon for 3 minutes to incorporate air.

Heat 2 cups vegetable oil in a deep skillet over medium heat.

Drop spoonfuls of bean batter into hot oil and fry for 4 minutes per side until golden brown.

In a pot, whisk 1 cup millet flour, 2 tbsp grated ginger root, and remaining 4 cups water until smooth.

Bring to a simmer over medium heat while stirring constantly until thick porridge forms.
