Ox Bone Soup
A comforting Korean broth made by simmering beef leg bones for hours until rich and milky white. Served hot with tender sliced brisket, fresh green onions, and simple seasonings.
Ingredients
- 3 lbs beef ox leg bones, soaked
- 1 lb beef brisket, trimmed
- 16 cups water
- 6 garlic cloves, peeled
- 1 cup green onions, thinly sliced
- 1 tbsp sea salt
- 1 tsp ground black pepper

Soak 3 lbs soaked beef ox leg bones and 1 lb trimmed beef brisket in cold water for 1 hour to draw out blood, then drain.

Parboil 3 lbs beef ox leg bones in a large pot of boiling water for 10 minutes, then drain and rinse clean.

Return 3 lbs beef ox leg bones, 1 lb beef brisket, and 6 peeled garlic cloves to the pot with fresh 16 cups water and bring to a boil.

Reduce heat to medium-low, cover, and simmer for 1.5 hours until 1 lb beef brisket reaches an internal temperature of 195°F.

Remove brisket, slice thinly, and continue simmering broth covered for 4 hours until milky white.

Ladle hot broth over sliced brisket, garnish with 1 cup thinly sliced green onions, and season with 1 tbsp sea salt and 1 tsp ground black pepper.
