Pavê de Doce de Leite
Layered Brazilian dessert with sweet cookies, creamy custard filling, and dulce de leche. No baking required, just chilling and layering.
Ingredients
- 1.5 lbs sweet vanilla wafer cookies or ladyfinger biscuits
- 1.5 cans sweetened condensed milk
- 1 can evaporated milk
- 4 large pasteurized egg yolks
- 1/4 cup butter (softened)
- 1/2 tsp vanilla extract
- 1 cup dulce de leche
- 1/2 cup whole milk
- 1 cup heavy cream (or whipped cream), whipped to stiff peaks
- 2 oz dark chocolate, shaved or grated

In a bowl, whisk together 1.5 cans sweetened condensed milk, 1 can evaporated milk, 4 large pasteurized egg yolks, 1/4 cup butter (softened), and 1/2 tsp vanilla extract until smooth and creamy.

Fold 1 cup whipped to stiff peaks heavy cream (or whipped cream) into the mixture gently until fully incorporated. Set filling aside.

Pour 1/2 cup whole milk into a shallow dish. Quickly dip each 1.5 lbs sweet vanilla wafer cookies or ladyfinger biscuits briefly (1 second per side) into the milk - do not soak.

Arrange a layer of dipped cookies on the bottom of a 9x13 inch baking dish or similar large container.

Spread half of the custard filling over the cookie layer.

Drizzle half of the 1 cup dulce de leche over the filling, spreading thinly.

Dip another batch of cookies and layer on top.

Spread the remaining custard filling over this layer.

Drizzle the remaining dulce de leche over the top.

Dip the final layer of cookies and arrange on top.

Cover with plastic wrap and refrigerate for at least 8 hours or overnight.

Just before serving, sprinkle 2 oz shaved or grated dark chocolate over the top.
