Salmon Salad
A light French bistro style salad featuring warm pan-seared salmon served over crisp greens, tender green beans, and radishes dressed in a tangy Dijon vinaigrette.
Ingredients
- 12 oz salmon fillets, patted dry
- 4 oz haricots verts, trimmed
- 4 cups mixed baby greens, washed
- 4 radishes, thinly sliced
- 1 tbsp capers, drained
- 1 tbsp Dijon mustard
- 2 tbsp fresh lemon juice
- 2 tbsp extra-virgin olive oil
- 1 tbsp olive oil
- 1/2 tsp fine sea salt
- 1/4 tsp freshly ground black pepper

Whisk 1 tbsp Dijon mustard, 2 tbsp fresh lemon juice, 2 tbsp extra-virgin olive oil, 1/2 tsp fine sea salt, and 1/4 tsp freshly ground black pepper together in a large bowl to create the vinaigrette.

Boil 4 oz trimmed haricots verts in salted water for 3 minutes, transfer to ice water, and drain well.

Heat 1 tbsp olive oil in a skillet over medium-high heat.

Pan-sear 12 oz patted dry salmon fillets for 3 to 4 minutes per side until the internal temperature reaches 145°F.

Toss 4 cups washed mixed baby greens, cooked haricots verts, 4 thinly sliced radishes, and 1 tbsp drained capers directly into the bowl with vinaigrette.

Divide salad onto plates and top with warm seared salmon fillets.
