Sans Rival
A classic Filipino dessert made of crisp cashew meringue layers filled and frosted with rich French buttercream and coated in toasted cashews.
Ingredients
- 6 large egg whites, room temp
- 1/2 tsp cream of tartar
- 1 cup caster sugar
- 2 cups cashews, chopped
- 3/4 cup granulated sugar
- 1/4 cup water
- 6 large egg yolks, room temp
- 1 cup unsalted butter, softened
- 1 tsp vanilla extract

Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.

Whip 6 large room temp egg whites with 1/2 tsp cream of tartar until soft peaks form, then gradually beat in 1 cup caster sugar until stiff peaks form.

Fold three quarters of the 2 cups chopped cashews into the meringue, reserving the remainder for garnish.

Spread meringue into four equal rectangles on parchment and bake for 30 minutes until crisp, then cool completely.

Boil 3/4 cup granulated sugar and 1/4 cup water in a small saucepan until syrup reaches 238°F (114°C).

Beat 6 large room temp egg yolks until pale, then stream in hot sugar syrup while beating continuously until cooled.

Whip in 1 cup softened unsalted butter one tablespoon at a time, then stir in 1 tsp vanilla extract to complete buttercream.

Layer cooled meringues with buttercream, coat outer surfaces, and garnish top with remaining 2 cups chopped cashews before chilling.
