Beyran Soup
A hearty Gaziantep soup featuring shredded tender lamb, short-grain rice, garlic, and fiery red pepper flakes in a rich broth.
Ingredients
- 2 lbs bone-in lamb neck
- 8 cups water
- 1 cup short-grain white rice, cooked
- 6 garlic cloves, minced
- 2 tbsp rendered lamb fat
- 2 tbsp Turkish red pepper flakes
- 1/2 tsp ground black pepper
- 1 tsp salt

Combine 2 lbs bone-in lamb neck and 8 cups water in a large pot over high heat and bring to a boil, skimming off foam.

Reduce heat to low, cover, and simmer for 2 hours until tender and meat reaches an internal temperature of 195F.

Remove bone-in lamb neck from stock, shred meat into fine pieces, and strain broth.

Melt 2 tbsp rendered lamb fat in a saucepan over medium heat and stir in 6 minced garlic cloves, 2 tbsp Turkish red pepper flakes, 1/2 tsp ground black pepper, and 1 tsp salt.

Add 1 cup cooked short-grain white rice, shredded bone-in lamb neck, and strained stock into the saucepan.

Bring to a rapid boil for 2 minutes before serving hot.
