Coddled Eggs
Silky eggs gently cooked in ramekins with heavy cream, butter, and fresh chives for a delicate breakfast.
Ingredients
- 1 tbsp unsalted butter, softened
- 2 large eggs
- 2 tbsp heavy cream
- 1 tbsp fresh chives, chopped
- 1/4 tsp kosher salt
- 1/8 tsp black pepper, ground

Bring one inch of water to a gentle simmer in a saucepan over medium heat.

Grease the inside of two egg coddlers or small ramekins with 1 tbsp softened unsalted butter.

Crack 2 large eggs into each coddler, then top with 2 tbsp heavy cream, 1/4 tsp kosher salt, 1/8 tsp ground black pepper, and 1 tbsp chopped fresh chives.

Seal coddlers securely and lower them into the simmering water.

Cover the saucepan and cook for 8 to 10 minutes until egg whites are set.

Remove coddlers carefully from the water, open, and serve warm.
