Lomo Saltado con Huevo
A savory Peruvian stir-fry of tender beef, crisp onions, tomatoes, and fries topped with a fried egg. The dish features a tangy soy sauce and vinegar glaze cooked quickly over high heat.
Ingredients
- 1.5 lbs beef sirloin, thinly sliced
- 4 cups french fries, warm
- 1 large red onion, sliced
- 2 Roma tomatoes, wedged
- 1 tbsp aji amarillo paste
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 2 tbsp red wine vinegar
- 3 tbsp vegetable oil
- 4 large eggs
- 2 tbsp fresh cilantro, chopped

Heat half of 3 tbsp vegetable oil in a wok or large skillet over high heat until smoking.

Add 1.5 lbs thinly sliced beef sirloin in a single layer and sear without moving for 2 minutes. Stir fry for 1 minute until browned and internal temperature reaches 135F, then transfer to a plate.

Add remaining 3 tbsp vegetable oil to the pan along with 1 large sliced red onion, 2 wedged Roma tomatoes, 2 minced garlic cloves, and 1 tbsp aji amarillo paste. Stir fry over high heat for 2 minutes.

Stir in 2 tbsp soy sauce and 2 tbsp red wine vinegar, returning 1.5 lbs thinly sliced beef sirloin and juices to the pan. Toss for 1 minute to coat.

Gently fold in 4 cups warm french fries and garnish with 2 tbsp chopped fresh cilantro.

In a separate skillet, fry 4 large eggs in oil until crisp on the edges. Serve stir fry topped with fried eggs.
