Lotus Seed Mooncake
A traditional pastry with a golden embossed crust wrapped around sweet lotus seed paste and salted duck egg yolks.
Ingredients
- 1.5 cups cake flour, sifted
- 1/2 cup golden syrup
- 3 tbsp vegetable oil
- 1/2 tsp lye water
- 2 cups lotus seed paste
- 6 salted duck egg yolks, steamed
- 2 tbsp beaten egg yolk, whisked

Mix 1/2 cup golden syrup, 3 tbsp vegetable oil, and 1/2 tsp lye water in a bowl until fully combined.

Fold in 1.5 cups sifted cake flour to form a soft dough, wrap tightly, and rest at room temperature for 1 hour.

Divide 2 cups lotus seed paste into 6 equal portions and wrap each portion around a 6 steamed salted duck egg yolks to form filling balls.

Divide the rested dough into 6 equal portions, flatten each into a thin disk, wrap around a filling ball, and press into a mooncake mold.

Unmold onto a parchment-lined baking sheet, mist lightly with water, and bake at 375 degrees F for 5 minutes.

Remove from oven, brush tops lightly with 2 tbsp whisked beaten egg yolk, and bake for another 10 to 12 minutes until golden brown.
