Pan con Lomito
A tender stir-fried beef sandwich served on crusty bread with tomatoes, red onions, and a tangy savory sauce.
Ingredients
- 1 lb beef tenderloin strips, sliced
- 2 tbsp vegetable oil
- 1 red onion, sliced
- 2 roma tomato, sliced
- 2 tbsp soy sauce
- 1 tbsp red wine vinegar
- 2 crusty French rolls, halved
- 2 tbsp mayonnaise
- 1/2 tsp salt
- 1/4 tsp black pepper, ground

Season 1 lb sliced beef tenderloin strips with 1/2 tsp salt and 1/4 tsp ground black pepper.

Heat 2 tbsp vegetable oil in a large skillet over high heat until smoking.

Add 1 lb sliced beef tenderloin strips and sear quickly for 2 minutes until browned, ensuring internal temperature reaches 135°F for medium-rare, then remove meat from pan.

Stir-fry 1 sliced red onion and 2 sliced roma tomato in the same skillet for 1 to 2 minutes until slightly softened but crisp.

Stir in 2 tbsp soy sauce and 1 tbsp red wine vinegar, then return 1 lb sliced beef tenderloin strips to the pan to coat for 30 seconds.

Spread 2 tbsp mayonnaise inside the toasted 2 halved crusty French rolls and fill generously with the beef and vegetable mixture.
