Saltado de Mariscos
A vibrant Peruvian stir-fry featuring mixed seafood wok-tossed with red onions, tomatoes, and crispy french fries in a tangy soy-vinegar sauce.
Ingredients
- 1 lb mixed seafood, cleaned
- 2 tbsp vegetable oil
- 4 garlic cloves, minced
- 2 tbsp aji amarillo paste
- 1 onion red onion, thickly sliced
- 2 tomatoes plum tomatoes, wedged
- 2 tbsp soy sauce
- 2 tbsp red wine vinegar
- 1 lb french fries, cooked warm
- 1/4 cup fresh cilantro, chopped

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat until smoking.

Add 1 lb cleaned mixed seafood and stir-fry for 2 to 3 minutes until opaque and reaching an internal temperature of 145°F.

Transfer seafood to a plate and add 4 minced garlic cloves and 2 tbsp aji amarillo paste to the wok, stir-frying for 30 seconds.

Add 1 onion thickly sliced red onion and 2 tomatoes wedged plum tomatoes, stir-frying for 1 to 2 minutes until slightly softened but crisp.

Pour in 2 tbsp soy sauce and 2 tbsp red wine vinegar, stirring constantly to combine the pan juices.

Return seafood to the wok, fold in 1 lb cooked warm french fries and 1/4 cup chopped fresh cilantro, then toss briefly before serving immediately.
