Shuba Salad
A classic Russian layered salad with pickled herring, tender root vegetables, hard-boiled eggs, and mayonnaise. Also known as dressed herring, this dish is chilled to let the flavors meld into a rich, savory centerpiece.
Ingredients
- 8 oz pickled herring fillets, diced
- 1 small yellow onion, finely diced
- 2 medium boiled potatoes, grated
- 2 medium boiled carrots, grated
- 3 large hard-boiled eggs, grated
- 2 medium boiled beets, grated
- 3/4 cup mayonnaise

Layer 8 oz diced pickled herring fillets across the bottom of a glass serving dish.

Scatter 1 small finely diced yellow onion over the herring and spread a thin layer of 3/4 cup mayonnaise.

Add 2 medium grated boiled potatoes in an even layer and spread with mayonnaise.

Layer 2 medium grated boiled carrots and 3 large grated hard-boiled eggs, then coat with more mayonnaise.

Top with 2 medium grated boiled beets and spread remaining mayonnaise over the top surface.

Cover dish and chill in the refrigerator for at least 4 hours before serving.
