Adobo de Cerdo
A Peruvian pork stew braised with aji panca, garlic, cumin, and vinegar until fork-tender and rich with flavor.
Ingredients
- 2 lbs pork shoulder, cubed
- 1/4 cup aji panca paste
- 6 garlic cloves, minced
- 1 red onion, sliced
- 1/4 cup red wine vinegar
- 1 tsp ground cumin
- 1 tsp dried oregano
- 2 tbsp vegetable oil
- 2 cups beef broth
- 1 tsp salt

Combine 2 lbs cubed pork shoulder, 1/4 cup aji panca paste, 6 minced garlic cloves, 1 tsp ground cumin, 1 tsp dried oregano, 1/4 cup red wine vinegar, and 1 tsp salt in a bowl to marinate for 30 minutes.

Heat 2 tbsp vegetable oil in a heavy pot over medium-high heat.

Remove pork shoulder from marinade, reserving liquid, and sear until browned on all sides.

Add 1 sliced red onion and cook for 3 minutes until softened.

Pour in reserved marinade and 2 cups beef broth, bringing the liquid to a simmer.

Cover and simmer for 45 minutes until pork shoulder reaches an internal temperature of at least 145 F and is fork-tender.
