Arroz Chaufa
Peruvian style fried rice tossed with chicken, eggs, and crisp green onions in a savory soy glaze. High heat gives this dish its signature smoky wok aroma.
Ingredients
- 4 cups day-old cooked jasmine rice
- 1 lb boneless skinless chicken thighs, cubed
- 4 large eggs, beaten
- 1 cup scallions, chopped
- 1 red bell pepper, diced
- 2 tsp fresh ginger, minced
- 4 garlic cloves, minced
- 3 tbsp soy sauce
- 2 tsp toasted sesame oil
- 2 tbsp vegetable oil

Heat 2 tbsp vegetable oil in a large wok over high heat.

Add 4 beaten large eggs and scramble quickly until set, then remove from the wok.

Add 1 lb cubed boneless skinless chicken thighs to the wok and stir-fry until cooked through and internal temperature reaches 165°F, about 5 minutes, then remove chicken.

Add 4 minced garlic cloves, 2 tsp minced fresh ginger, and 1 diced red bell pepper to the wok and stir-fry for 1 minute.

Add 4 cups day-old cooked jasmine rice, pressing down to break up clumps, and fry for 2 minutes.

Stir in scrambled eggs, cooked chicken, 3 tbsp soy sauce, 2 tsp toasted sesame oil, and 1 cup chopped scallions, tossing constantly for 2 minutes before serving.
