Baked Potato with Tuna Mayo
Crispy baked potatoes stuffed with a creamy, savory tuna and sweetcorn filling. A staple British lunch classic that comes together with minimal effort.
Ingredients
- 2 russet potato, scrubbed
- 1 tbsp olive oil
- 1/2 tsp fine sea salt
- 1 can canned tuna in water, drained
- 3 tbsp mayonnaise
- 1/4 cup canned sweetcorn, drained
- 2 tbsp red onion, diced
- 1/4 tsp black pepper, ground
- 1 tbsp fresh chives, chopped

Preheat oven to 400F (200C). Prick 2 scrubbed russet potato all over with a fork, rub with 1 tbsp olive oil, and sprinkle with 1/2 tsp fine sea salt.

Place potatoes directly on oven rack and bake for 50 to 60 minutes until skin is crisp and potato inside is tender.

In a medium bowl, combine 1 can drained canned tuna in water, 3 tbsp mayonnaise, 1/4 cup drained canned sweetcorn, 2 tbsp diced red onion, and 1/4 tsp ground black pepper until smooth.

Slice baked potatoes lengthwise down the middle, press ends inward to open, and top with the tuna filling.

Garnish with 1 tbsp chopped fresh chives and serve immediately.
