Black Pudding
A traditional savory blood sausage combined with oatmeal, suet, and warm spices, baked then pan-seared to crisp perfection.
Ingredients
- 1 cup pinhead oatmeal, soaked
- 2 cups pig's blood, strained
- 1 cup beef suet, shredded
- 1 cup yellow onion, finely diced
- 1/2 tsp ground allspice
- 1 tsp fine sea salt
- 1/2 tsp black pepper, ground

Soak 1 cup soaked pinhead oatmeal in boiling water for 30 minutes until softened, then drain excess liquid.

In a mixing bowl, combine the drained pinhead oatmeal, 2 cups strained pig's blood, 1 cup shredded beef suet, and 1 cup finely diced yellow onion.

Season the mixture with 1/2 tsp ground allspice, 1 tsp fine sea salt, and 1/2 tsp ground black pepper, stirring thoroughly to distribute seasonings.

Pour the mixture into a lined loaf pan and bake at 320°F (160°C) for 1 hour until firm.

Verify the internal temperature reaches 160°F (71°C) before removing from the oven.
