Taro and Sticky Rice Sweet Pudding
A sweet coconut soup made with tender cooked taro root, soft glutinous rice, and fragrant pandan. Served warm and topped with a creamy salted coconut sauce.
Ingredients
- 1 lb taro root, cubed
- 1/2 cup glutinous rice, rinsed
- 4 cups water
- 2 pandan leaves, knotted
- 1/2 cup granulated sugar
- 1 can coconut milk
- 1/2 tsp salt
- 1 tbsp tapioca starch

Steam 1 lb cubed taro root in a steamer basket over boiling water for 15 minutes until tender.

In a medium pot, combine 4 cups water, 1/2 cup rinsed glutinous rice, and 2 knotted pandan leaves, then bring to a boil and simmer for 15 minutes.

Stir 1 lb cubed taro root, half of the 1/2 cup granulated sugar, and half of the 1/2 tsp salt into the rice pot, simmering for 10 minutes until thick.

In a small saucepan, whisk 1 can coconut milk, remaining 1/2 cup granulated sugar, remaining 1/2 tsp salt, and 1 tbsp tapioca starch over low heat until thickened.

Ladle warm taro pudding into serving bowls and spoon the coconut sauce over top.
