Codfish Salad
A traditional Brazilian style salt cod salad tossed with tender potatoes, sliced red onion, pitted black olives, and rich olive oil dressing.
Ingredients
- 1 lb desalted salt cod fillets, flaked
- 1 lb Yukon Gold potatoes, diced
- 1 medium red onion, thinly sliced
- 1/4 cup extra-virgin olive oil
- 2 tbsp fresh lime juice
- 1/2 cup pitted black olives, halved
- 1/4 cup fresh parsley, chopped
- 2 hard-boiled eggs, quartered

Bring a large pot of water to a boil over medium-high heat.

Boil 1 lb diced Yukon Gold potatoes for 10 minutes until tender, then drain and set aside to cool.

In the same pot of boiling water, simmer 1 lb flaked desalted salt cod fillets for 8 minutes until it reaches an internal temperature of 145°F, then drain and cool.

Whisk 1/4 cup extra-virgin olive oil and 2 tbsp fresh lime juice together in a large bowl.

Add Yukon Gold potatoes, desalted salt cod fillets, 1 medium thinly sliced red onion, 1/2 cup halved pitted black olives, and 1/4 cup chopped fresh parsley to the bowl and toss to combine.

Garnish with 2 quartered hard-boiled eggs and serve chilled.
