Sopa de Agnoline
A comforting broth soup featuring stuffed agnoline pasta cooked with chicken and fresh vegetables. It is a traditional staple of Italian-influenced southern Brazilian cuisine.
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 lb boneless chicken thighs, cubed
- 8 cups chicken broth
- 1 lb meat agnoline pasta
- 1/4 cup fresh parsley, chopped

Heat 2 tbsp olive oil in a large soup pot over medium heat.

Add 1 diced yellow onion, 2 diced carrots, 2 diced celery stalks, and 4 minced garlic cloves, sautéing for 5 minutes until soft.

Add 1 lb cubed boneless chicken thighs and cook until lightly browned and the internal temperature reaches 165°F (74°C).

Pour in 8 cups chicken broth and bring to a steady simmer over medium-high heat.

Stir in 1 lb meat agnoline pasta and cook for 8 to 10 minutes until tender.
