Costillas de Cerdo Adobadas
Tender pork ribs steeped in a fragrant Spanish paprika, garlic, and herb marinade, then slow-roasted until succulent.
Ingredients
- 2.5 lbs pork baby back ribs, trimmed
- 2 tbsp Spanish sweet smoked paprika
- 6 garlic cloves, minced
- 1 tbsp dried oregano
- 3 tbsp extra-virgin olive oil
- 2 tbsp white wine vinegar
- 1.5 tsp kosher salt

In a bowl, combine 2 tbsp Spanish sweet smoked paprika, 6 minced garlic cloves, 1 tbsp dried oregano, 3 tbsp extra-virgin olive oil, 2 tbsp white wine vinegar, and 1.5 tsp kosher salt to create a paste.

Coat 2.5 lbs trimmed pork baby back ribs thoroughly with the spice paste, cover, and marinate in the refrigerator for at least 2 hours.

Preheat oven to 325°F (165°C), place ribs on a foil-lined baking sheet, and seal tightly with foil.

Bake for 75 minutes, then uncover and roast for 15 minutes more until internal temperature reaches 190°F.
