Groundnut Soup
A rich, creamy peanut-based soup loaded with vegetables, meat, and warm spices. A comforting West African classic that's hearty and deeply satisfying.
Ingredients
- 1/2 cup peanut butter (natural, unsweetened)
- 12 oz beef stew meat, cubed
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1/2 tsp fresh ginger, minced
- 8 oz sweet potato, cubed
- 2 cups fresh spinach, chopped
- 4 cups chicken broth
- 2 tbsp tomato paste
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper

Heat oil in a large pot over medium-high heat. Add 12 oz cubed beef stew meat and brown on all sides, about 8 minutes. Remove and set aside.

In the same pot, sauté 1/2 cup diced onion, 3 cloves minced garlic, and 1/2 tsp minced fresh ginger until fragrant, about 2 minutes.

Add 2 tbsp tomato paste and stir for 1 minute. Return beef to the pot.

Pour in 4 cups chicken broth and bring to a simmer. Add 8 oz cubed sweet potato, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp cayenne pepper. Simmer for 25 minutes.

Stir in 1/2 cup peanut butter (natural, unsweetened) until fully dissolved. Add 2 cups chopped fresh spinach and simmer for 5 more minutes until spinach wilts.

Taste and adjust seasoning. Serve hot over rice if desired.
