Hausa Koko
A traditional West African spicy millet porridge infused with ginger, cloves, and chili. Served warm with a light touch of sweetener for a hearty morning meal.
Ingredients
- 1 cup millet flour
- 2 cups cold water
- 3 cups boiling water
- 1 tbsp fresh ginger, grated
- 1/2 tsp ground cloves
- 1/4 tsp cayenne pepper
- 2 tbsp granulated sugar

In a bowl, mix 1 cup millet flour with 2 cups cold water until a smooth batter forms.

Stir 1 tbsp grated fresh ginger, 1/2 tsp ground cloves, and 1/4 tsp cayenne pepper directly into the millet batter.

Bring 3 cups boiling water to a gentle simmer in a pot over medium heat.

Gradually pour the spiced batter into the pot while whisking continuously to prevent lumps.

Cook for 8 to 10 minutes while whisking until the mixture thickens and turns glossy.
