Lorne Sausage
A traditional Scottish square sausage spiced with nutmeg and coriander. It is molded into a block, chilled until firm, sliced into square patties, and pan fried.
Ingredients
- 1/2 lb ground beef
- 1/2 lb ground pork
- 1/2 cup fine breadcrumbs
- 1/3 cup ice water
- 1 tsp fine salt
- 1 tsp ground black pepper
- 1/2 tsp ground coriander
- 1/4 tsp ground nutmeg
- 1 tbsp vegetable oil

In a large bowl, combine 1/2 lb ground beef, 1/2 lb ground pork, 1/2 cup fine breadcrumbs, 1 tsp fine salt, 1 tsp ground black pepper, 1/2 tsp ground coriander, and 1/4 tsp ground nutmeg.

Pour in 1/3 cup ice water and mix thoroughly with your hands until sticky and uniform.

Line a small loaf pan with plastic wrap, press the meat mixture firmly inside to remove air gaps, and freeze for 1 hour until firm.

Turn the meat block out onto a board and slice into 1/2-inch thick square patties.

Heat 1 tbsp vegetable oil in a skillet over medium heat.

Fry patties for 4 to 5 minutes per side until well browned and the internal temperature reaches 160°F.
