Ingredients

  • 2 packs instant ramen noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 red Thai chili, minced
  • 2 shallots, sliced
  • 1 tbsp sambal oelek or chili paste
  • 1 tbsp ketchup
  • 1 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp fresh lime juice
  • 2 egg, beaten
  • 2 green onions, sliced
  • 1 tbsp fresh cilantro, chopped

Instructions

    Cook 2 packs instant ramen noodles according to package directions until just tender, drain and set aside (reserve the seasoning packet).

    Heat 2 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add 2 cloves minced garlic, 2 sliced shallots, and 1 minced red Thai chili and stir-fry for 1 minute until fragrant.

    Push everything to the side and scramble 2 beaten egg in the center. Once partially cooked, mix with the aromatics.

    Add the cooked noodles and break apart any clumps while stirring.

    Add 1 tbsp sambal oelek or chili paste, 1 tbsp ketchup, 1 tbsp soy sauce, 1/2 tbsp dark soy sauce, 1 tbsp oyster sauce, and half the reserved noodles seasoning packet. Toss constantly for 2-3 minutes until the noodles are well coated and slightly charred.

    Remove from heat and squeeze 2 tsp fresh lime juice over the noodles.

    Transfer to a plate and garnish with 2 sliced green onions and 1 tbsp chopped fresh cilantro. Serve immediately.
