Cajun Potato Soup
A creamy and hearty soup loaded with smoky sausage, tender potatoes, and bold spices. It cooks in one pot for a quick and comforting meal.
Ingredients
- 12 oz andouille sausage, sliced
- 1 cup yellow onion, diced
- 1 cup celery stalk, diced
- 1 cup green bell pepper, diced
- 4 garlic cloves, minced
- 2 tbsp Cajun seasoning
- 3 lbs russet potatoes, cubed
- 4 cups chicken broth
- 1 cup heavy cream
- 1/4 cup green onions, sliced

Brown 12 oz sliced andouille sausage in a pot over medium-high heat until browned and cooked to an internal temperature of 165F, about 5 minutes, then remove sausage and set aside.

Add 1 cup diced yellow onion, 1 cup diced celery stalk, and 1 cup diced green bell pepper to the pot and cook until softened, about 5 minutes.

Stir in 4 minced garlic cloves and 2 tbsp Cajun seasoning, cooking for 1 minute until fragrant.

Add 3 lbs cubed russet potatoes and 4 cups chicken broth, bring to a boil, and simmer covered for 15 minutes until potatoes are tender.

Mash half of the potatoes against the pot side to thicken, then stir in 1 cup heavy cream and reserved andouille.

Simmer for 3 minutes until heated through, then garnish with 1/4 cup sliced green onions before serving.
